With everything I bake I like to test and tweak recipes until they are at what I would consider it my go to recipe. That way I have much more time for baking and don't need as much time for falling in foodie internet holes ....Which I do with enough of my time already ;) Coffee cake is a very popular recipe in cafes and bakeries around here. So much so that I really don't know why I don't bake it more often, I think I will be now after getting this recipe in my rotation. So, here is what I would say is the classic coffee cake recipe. This cake is light but flavourful cake with its streusel topping/filling. You will be definitely looking forward to when its time for that afternoon snack. My biggest tip would be to make sure not to over mix the batter when combining the wet and dry ingredients. Over mixing with this cake can make it much more dense when a more airy texture is what we are looking for. For now lets eat cake! Ingredients: Streusel topping and filling:
